Not as small after all

Even though it is often described as a lost dot in the middle of the immensity of the Indian Ocean, it is worth knowing that Mauritius already appeared on the planisphere of Alberto Cantino, published in 1502. Australia was non-existent and only some bits of America were present. Located at the crossroads of the Indian Ocean, Mauritius can boast of having been able to take advantage of its geostrategic position in terms of trade and transfer of know-how.

A know-how highly responsible for cultural enrichment and the development of a varied and authentic cuisine. This explosion of tastes and flavours, sometimes very exotic, is largely due to the perfect matching of ingredients from various continents. The adaptation of the different cuisines of the world symbolizes the symbiosis which exists between the various cultures found on the island. Going back in history, it is clear this unique culinary blend found its inspiration in the movements of migrants who came to populate the island at the beginning of the 19th century. And in this fusion cuisine, we find boldness and successful inversions.
